Carbon Copy Is Popping Up In Former Separatist Philly Location

Carbon Copy has only been open for 6 months and is already looking toward expansion. You can read all the details about the West Philadelphia-based brewery from our initial interview with them.

The West Philadelphia-based brewery will open a pop-up taproom in South Philly at Separatist’s former location at 1646 S 12th Street. This location will be open all summer, and if things go well, they could potentially stay.

We spoke with Kyle Wolak, co-owner of Carbon Copy, to get more details on the new pop-up taproom.

BIPA: When does the taproom open?

Kyle: This new pop-up taproom opens officially Friday, June 9th at 4 PM. From then on, we will have similar hours to our West Philly location: Monday 4-10PM, Tuesday CLOSED, Wednesday-Thursday 4-11PM, Friday 4-12AM, Saturday 12-12AM, and Sunday 12-8PM.


BIPA: Will this be a new permanent space for Carbon Copy?

Kyle: With Separatist announcing they were temporarily closing back in April, I knew the location was open, and we started to speak with Joe at Separatist. We will start with a summer pop-up taproom here, and if things go well we can explore the option of a more long-term residency here.


BIPA: How big is the taproom? Taps? Cans?

Kyle: The taproom is located inside a 2,500 sq/ft first floor of a 3-story building. We will have about 50 seats inside, and we will have some outside seating when it’s nice out.

There are 16 taps that will be our beer and our wine available on draft. We will also have cans to go as well. Eventually, we will have draft cocktails available too.

BIPA: Will you have food at this location?

Kyle: We will not have a kitchen, but we will serve some snacks, tomato pie that we make at our brewery in West Philly, and also some house-made chips. Guests are also welcome to bring food in as well.


BIPA: Will you be brewing at this space?

Kyle: We will not be brewing here, this will be a taproom-only location. We will still brew our beer and our wine at our West Philly location. 


BIPA: Anything else our readers should know about the new pop-up location?

Kyle: For the regulars of Separatist, we were able to hire back almost all of the former workers who wanted to come back!
