Paired Pints: Conshohocken Brewing Co Cozy Slippers Winter Warmer & Gorgonzola Mac and Cheese with Balsamic Cherries

The six degrees of separation for Conshohocken Brewing Co., Breweries in PA, and myself started in 2017 when I attended Breweries in PA’s The Pittsburgh Invades Philly Tap Takeover at Conshohocken Brewing’s Bridgeport location. Not too long after that, I messaged the guys and we struck up our friendship. Fast-forward a couple of months later and the brewery expanded to Phoenixville under the name Rec Room.

Located directly across the street from the iconic Colonial Theater, it offers a ton of seating up and downstairs as well as a backroom full of ping pong and shuffleboard tables.

The Beer:

Cozy Slippers is a 6.6% abv malty winter warmer that delivers balanced layers of spice, sweetness, and smoothness. The addition of Belgian candi sugar in the beer helped bring out the sweetness in the balsamic cherries. With the gorgonzola being salty, buttery, and funky, I knew this winter warmer’s strong and sweet flavors would complement one another. If you like funky cheese, this recipe is a fantastic pairing and serves about 6.

Mac and Cheese:

About .5lb of Creamy Gorgonzola (Wegman’s)
Balsamic Cherries (Wegman’s)
16 oz bag of Orecchiette
2 Tbsp Heavy Cream
Salt
Pepper

• Fill up a large pot a little more than halfway. Bring to a boil, salt generously
• Boil pasta for 11-13 minutes.
• Drain pasta and return back to the pot.
• Add the gorgonzola and heavy cream, stirring constantly. Stir until the cheese has fully melted.
• Add about ⅓ cup of balsamic cherries and season with salt and pepper then stir in and serve up.
