Some milestones are years in the making, and today marked a major one for Dublin Brewing Company and owner Brendan FitzGerald. After a morning filled with nerves, anticipation, and plenty of stress, FitzGerald announced on social media that the brewery had officially passed its use and occupancy inspection and received approval to open its doors. While a few final steps remain before the brewery can begin serving alcohol, the approval represents a significant milestone in its journey to opening. Beloved, ever been so nervous you felt like throwing up?
That was me before, during and a bit after my use and occupancy inspection this morning.
But…
I passed and the borough says I can open! 🙏
Now, I gotta finalize my last couple of bits to sell booze but I’m hitting that hard and will keep you posted.
Well, we gotta celebrate so I’m planning “something”. Thinking a “bring your own everything” event. Something to fill the place with good memories to celebrate these early days. Keep an eye on the socials for more info.
