Meet The Brewer: Kevin Barrick of 633 Brewing

633 Brewing opened its doors in February 2021, at 118 Walnut Street in Waynesboro. 633 Brewing was opened with a 3BBL brewhouse by owners/operators Kevin Barrick and Heather Weeks. The name 633 pays homage to the town of Waynesboro. The two owners found the town’s original deed was for 633 acres, the name stuck, and 633 brewing was born.

What was your introduction to craft beer?

I had a Sam Adams Light at a cookout and my love for craft beer blossomed from there.

How did you get started as a brewer?

I got started in a garage with a couple of buddies. I knew then, over 10 years ago, that I wanted a brewery.

What style allows you to be the most creative, and why?

I haven’t been real creative to this point. I wanted to start with four simple, straightforward beers and branch out from there.

What was the first beer you ever brewed, and what did you learn from it?

A heavy stout. We named it “Stout at the Devil” which was fitting as it exploded in my buddy’s linen closet! I learned proper headspace in the fermenter is a must, along with a clear airlock! LOL

Where do you see the craft beer industry heading in the next few years?

More breweries and fewer bars. People enjoy seeing where the products are made.

Describe what it’s like to be a brewer in Pennsylvania.

I love the camaraderie that goes with being a brewer in PA. It’s a great industry and I’m proud to be a part of it.

What is the inspiration behind your beer names?

We draw our inspiration for our beers’ names from the town as we did the brewery name.

What is your favorite beer to drink right now?

Right now I’m really enjoying our “J. Wallace Hazy IPA.” It’s a refreshing beer for a hot summer day.

What is the most important lesson you learned in the beer industry so far?

I’ve learned many lessons in just the 3-4 months that we’ve been open but the biggest thing I’ve learned so far is don’t stop learning! There is always something new and old to learn and I’m enjoying it all.
