Big congratulations to Brendan and Jackie Breslin of Wishful Thinking Brewing Company in Bethlehem for taking home Gold in the Brett Beer category at the 2026 Great American Beer Festival! Even more impressively, Wishful Thinking was the only Pennsylvania brewery to bring home a medal at this year’s competition.

On Any Given Day is a dry-hopped, barrel-aged saison (6.10% ABV) that highlights regional ingredients. Built on local Pilsner and Wheat malts from PA’s Double Eagle Malting, it ages in oak barrels with Brettanomyces yeast for a subtle, rustic depth. Dry-hopped with New York Cascade hops and bottle-conditioned, it pours crisp and bubbly with bright notes of freshly peeled citrus, soft florals, and a delicate touch of farmhouse funk.

On an Instagram post announcing the win, Wishful Thinking wrote that they started their saison program with local craft malt to allow them to be creative and provide a unique offering to their customers. It has flourished into something they now hold close to their hearts: wild yeast and local ingredients that allow us to showcase expressive beers we all truly love at Wishful Thinking. Thank you for all of the congratulatory messages and support.

Wishful Thinking Brewing Company opened on Southside Bethlehem’s Broadway in April 2024. They took the old Bavarian Tavern, a dark, classic neighborhood dive, and turned it into a bright, welcoming spot for great beer and food. They focus on local ingredients: almost all their grain comes from nearby suppliers like Double Eagle, and they make their Detroit-style deep-dish pizzas with locally milled flour.
