Stable 12 Brewing Company is located in the historic district of Phoenixville, PA. Walking in, a feeling of comfort overwhelms you even if its your first visit as the welcoming bar and laid back vibe is apparent. This is solidified by a single bartender most nights and more often than not, either owner Chris or Ricky in attendance.
Sitting down you’re met by two clear options: an assortment of craft beer and traditional pub food with a little extra kick. With plans to expand their kitchen in the near future, Stable 12 currently offers a modest menu. Boasting wings, pulled pork, fried pickles and Oreos as well as taproom favorite brisket fries.
An ever evolving tap list boasts a wide variety of styles enticing you to try a flight. See below for a few of the latest selections:
- Bridge Street Kolsch
- At 4.9% ABV, this perfect springtime beer is flavored with Hallertau and Tettnang hops.
- Razzle Dazzle (Raspberry Witbier)
- Don’t be fooled by the name, this 4.7% Witbier is for brew buds and brew babes alike. Conditioned on raspberry puree, this beer offers a nice tartness with a balanced sweet finish.
- One Trick Pony Series #1 (Chinook)
- This is the first of the “One Trick Pony” series, different session IPA’s made exclusively with one hop. At 5.3% this beer is hopped with just Chinook giving it a piney aroma.
- One Trick Pony Series #2 (Falconer’s Flight)
- Continuing with the series, #2 is brewed with an identical recipe, only with Flaconer’s Flight, giving this brew a citrus punch at 4.8%.
- Dickelbock (Doppelbock)
- Despite having an ABV on the higher side (7%), Dickelbock offers a thin mouthfeel while still delivering on warmth and malty sweetness.
- Rye Not? (Pale Ale)
- A departure from your traditional IPA, Rye Not (4.9%) combines Chinook, Cascade and Centennial hops with a tri-blend of malts, giving it a bready and slight dry taste.
- Wait For It (Bourbon Barrel Barley-wine)
- Wait For It (10.5%) spent over 7 months conditioning in Willet Whiskey barrels. This produced a slight twist on your typical barley-wine, with a thinner mouthfeel, lighter color, and a more mild sweetness.
Behind the brewery’s minimalist appearance is a history of a wild few years for owners Ricky and Chris. Both currently still hold down full time jobs while simultaneously running the brewery and its staff. And to think just a few years ago this pair was home brewing out of Ricky’s family stable, and now are talking canning and distribution in the near future.
Currently a 15bbl operation, Stable 12 has plans to double their output in 2017. They recently opened their beer garden to great success and future plans include both an outside bar and an expanded kitchen that will include Philly cheesesteaks among many other dishes.
Stable 12’s ability to bring a warm, comfortable local bar feeling while still focusing on growing into a full fledged attraction is what will make them a staple on Bridge Street for years to come.
