Wishful Thinking On The River Is Now Open In Riegelsville

Wishful Thinking Brewing opened the doors to its brand-new taproom, Wishful Thinking on the River, today (8/21/25), bringing its signature brews and food to a stunning waterfront setting. Announced earlier today on social media, the new taproom promises to be a go-to spot for locals and visitors alike, offering scenic views and fresh pours that have made the brewery a local favorite. The taproom is located at 1400 Easton Road, Riegelsville.

Wishful Thinking has installed a 5-head Lukr tower in this new taproom (just like they have in their taproom in Bethlehem), an espresso machine, and cold brew on tap as well. The brewery also has plans to roast coffee as “Wishful Thinking Coffee”.

Back in 2022, when opening a brewery was still just a dream for us, we started @pizzapostco out of the kitchen at 1400 Easton Road in Riegelsville. We used it as our commercial kitchen to mix dough, prep ingredients, and figure out the all of the struggles of starting a mobile pizza kitchen. (Scroll to the last pic for a flashback!).

Our first few pop-ups were down the road at @traugersfarmmarket, one of the most scenic parts of the area. We love this stretch of 611 that tightly flows with the river and the canal towpath. Back then, we could only hope that we would be able to use 1400 Easton Road as a taproom, pizza shop, or whatever came of Wishful Thinking.

Fast forward to 2025, and we are thrilled to announce that we are officially opening our doors to offer our beers and pizzas crafted from local agriculture, and our new brand of coffee that is ethically sourced and intentionally roasted. We’ll be offering an evolving continuation of our current menu (those who’ve come to know our Bethlehem taproom @wishfulthinkingbeer can rest assured!) that is based around our crunchy, cheesy square pies, and will most importantly continue our tradition of serving approachable beers properly poured through our @lukr.cz tower. We’re also thrilled to be offering a full coffee menu, as well as selling our beans in bags for home consumption!

This beautiful taproom along the Delaware allows us to continue to emphasize that the agricultural products that we serve should be crafted from our own local agriculture. We will continue to source the ingredients going into both our beer and food offerings as locally as possible, and will also strive to source the highest quality coffee beans, creating and preserving genuine relationships with all of the farmers and artisans we work with.

We hope to see you soon along the canal path or floating down the river. Stop on in for a nice foam-capped Lukr pour and some pizza before or after.
