Mindful Brewing Company, Schneider’s Dairy, and Coffee Tree Roasters announce the release of their combined craft beer collaboration, “Take the Cannoli… and the Coffee”: a Dark Sour Ale.

Canning is scheduled for Monday, August 15th, 2022 and official release on the 16th. This will be the second craft beer collaboration release between Mindful Brewing Co. and Schneider’s Dairy and the first collaboration including another Pittsburgh staple, Coffee Tree Roasters.

Starting in early 2022, Mindful Brewing Co. and Schneider’s Dairy leadership began to discuss collaborative ways to develop new products in the craft beer realm. This exploration between the two brands produced the Lemon Iced Tea Sour which is brewed using a Schneider’s dairy culture, pounds of loose leaf tea, and of course fresh lemons.

The explosive popularity of the initial release of the Lemon Iced Tea Sour opened the door to an endless realm of collaborative possibilities – ultimately leading to the design and production of the, “Take the Cannoli”, Dark Sour Ale.

Inspired by the upcoming Bloomfield Little Italy Days starting August 18th, this brew is also made with Schneider’s dairy culture and this time with pounds of fresh coffee provided by CTR. To give that bakery fresh finish, Brewing Project Lead, Levi Roundsville infused cinnamon, allspice, and villain extracts into the brew.

“I didn’t just want to make another run-of-the-mill stout with added spices.” Levi mentions as he pulls a freshly-carbonated sample from the brite tank, “Developing a product with such great local companies has been inspiring and provided a fun challenge to find a balance between flavor profiles that showcases the strengths of each brand,” he continues to share.

Guests will be able to purchase the “Take the Cannoli” collaboration at any of the brewery’s locations and will be available for resale at the Little Italy Days Festival in Bloomfield in front of White Whale Bookstore on Liberty Ave. from August 19th-21st.
