Grand Opening; Mondays Brewing Company October 31st (Peters Township)

Congratulations to Mondays Brewing Company who opens its doors for the first time Saturday, October 31st. The brewery will be located at 1055 Waterdam Plaza off Route 19 in Peters Township.

We recently spoke with the owner and head brewer Sam Fee who shared details and behind the scenes insight on what beer fans can expect from the brewery.

Why the name? It’s pretty simple actually. “We will be open on Mondays. It always drove me nuts that on the hardest day of the week, most breweries were closed and I couldn’t get good craft beer.” Sam says. “That has changed now with COVID, and more are open in the Pittsburgh area, but here in Washington County, not many are open on Mondays, and I plan to change that!”

The brewery will utilize a 5BBL brewing system, with 12 taps to start. The goal is to give the most variety to customers, while also providing other guest taps. The location will be able to accommodate 79 patrons and have outdoor seating as well.

Opening weekend will include a limited number of beers on tap with more coming the following weekend. None the less there will be an assortment of draft beverages from the region available including Whisky from Washington, Wine from Canonsburg, Mead from Carnegie, and Cider from the city. Food will also be available to purchase from numerous local restaurants.

Specifically, on Mondays at Mondays Brewing, there will be specials for service industry workers, since most typically have that day of the week off. Mondays will also offer crowlers of their beer to go once they open.

When talking to Sam, he mentioned a few core beliefs that will shine through in the brewery.

Quality Liquid

We aren’t interested in doing anything half-assed. I will literally pour beer down the drain before serving something that isn’t up to standards. We will also have a wide variety so that any craft drinker can find something to try. I know a lot of breweries focus, but we will have a wide variety of styles.

Education

We want to share what we know about the craft to anyone willing to talk with us! So a big part of our business model is not simply making the best beer we can, but also teaching others to make or enjoy their best beers. We also want to be a place where everyone can come in and talk beer. So we will have events to foster those conversations.

Focus On Local

All our grains are locally sourced. In addition, all of our snack foods will be local, and we are building relationships with local restaurants to supply food to the taproom. We are really working hard to source everything locally and to support other local businesses. When you come to Mondays, you are coming to the local community.”

Community

We are all about the brew culture vibe and bringing it to Peters Township. Right now there is a little dead zone for craft breweries between Mt. Lebanon and Canonsburg (between Hitchhiker and Rusty Gold), so we are working to become the neighborhood brewery for Peters Township.
