Stickman Brew’s This is Happening Black IPA Paired With Fricasé de Pollo

The aroma of This is Happening made me think if a chocolate stout and an IPA made a cologne, this would be it.and it was delightful. The color; a mostly opaque dark brown to black with a tan head that slid nicely down the glass with each sip.  The IPA side lends its citrus, pine, and spice while the vanilla and molasses come through on the back end. I also taste notes of tobacco which I feel makes this pairing so delicious. The sauce of my dish alone is a great pairing to this beer. The addition of the chicken and potatoes really lets the IPA flavors join the party of welcomed ingredients.

I picked this dish because I thought about how its ingredients would go with the beer. According to the interwebs, Nitza Villapol, the legendary Cuban cook made this dish famous however, her recipe is a little different from mine. I did not add raisins and pimento stuffed green olives. The brininess of the olives and sweetness of the raisin; in my eyes, weren’t going to work with this pairing.

• 1⁄4 cup lime juice (fresh is best)
1⁄4 cup orange juice (fresh is best)
3 cloves garlic (pressed)
4 chicken breasts
1 ⁄3 cup olive oil
1 large green bell pepper, stemmed, seeded, and thinly sliced
3 shallots thinly sliced
1 cup dry white wine
3/4 lb. russet potatoes, peeled and cut into 1″ pieces
1⁄2 capers
2 habanero peppers, seeded, finely diced
1 cup frozen peas, defrosted
1 (8-oz.) can San Marzano tomatoes

Steps:

  1. Add lime and orange juices, garlic, chicken, salt, and pepper in a bowl. Cover with plastic wrap; chill for at least an hour and a half.
  2. Heat oil in an cast iron skillet over medium-high heat. Remove chicken from marinade; pat dry. Keep your marinade to the side. Working in batches, cook the chicken, flipping once, until browned.
  3. Transfer chicken to a plate. Add bell pepper, shallots and garlic to skillet. Cook for about 6 minutes on medium heat. Pour in the white wine, scraping up fond from bottom of pan and cook for about 8 minutes.
  4. Add all cooked ingredients to a large pot and add 1/3 cup of reserved marinade, 1/4 cup of water, potatoes, San Marzano Tomatoes and boil. Reduce heat to medium-low; cook, covered, until chicken and potatoes are tender, about an hour, stir occasionally. Stir in peas with 5-8 minutes left in the cook time.
  5. Season to taste, serve in a bowl and pour This is Happening in a Pint Glass. Enjoy!
